There is a minimal intervention in the winery with traditional techniques used to encourage expression. The grapes are cold soak macerated and fermented in small tanks with controlled temperatures. Malolactic fermentation is done in tanks and then aged for 11-12 months in a selection of the finest American and French oak barriques. Once bottled is cellared to allow integration prior to release.
